Broccoli, Egg and Cheese Casserole

My last egg casserole was a bit of a disappointment for me. Lacking flavor, I just didn’t want to eat it. This time I used some different ingredients for a protein packed breakfast that is easy to make, and inexpensive!

Ingredients:

7oz Frozen Hash Browns

1 Cup 2% Mild Cheddar

1 Cup 2% Reduced Fat Milk

6 Large Eggs

276G Liquid Egg Whites

170G Broccoli Florets (chopped frozen)

100G Ham (leftover ham from Christmas)

 

Directions

  1. Preheat oven to 400 degrees F
  2. Spray non stick in a glass pyrex (I believe i used an 8×8)
  3. place frozen hash browns in the container, place in oven for about 15-20 min
  4. While those cook, mix eggs, egg whites, and milk until well combined
  5. add cheddar and mix. Salt and pepper to taste
  6. Chop broccoli florets if needed, mix in
  7. Chop ham to bite size pieces and mix in
  8. Salt and pepper to taste
  9. Bake for an additional 30-40 min or until eggs set

Servings: 5

Calories: 284 per serving MACROS: 12.3G Fat/ 15.3G Carbs/ 26G protein

Feel free to add more veggies, like onions or peppers! Use less or more cheese, or a different type of milk! Maybe use bacon or sausage instead of ham! This was an easy make.
